Ingredients

FOR 4 SERVINGS
Shrimp with shell

Carrots

Fresh parsley

Extra Virgin olive oil
as needed
Tomato concentrate
1/2 spoon
Cornstarch
2 spoons
Salt
as needed
Pepper
as needed

Preparation

  1. Wash shrimp well, pat dry and place in a large saucepan.

For the broth:

  1. peel and wash carrot, celery and onion and add them to the shells with the bay leaf, one litre of water and a glass of white wine.
  2. Season with salt and cook for half an hour.
  3. Then, blend everything, pass the mixture through a sieve into a bowl with a litre and a half of water.
  4. Boil for a further 30 minutes, in order to reduce the liquid to a third, salt as required.
  5. Separately, in 4 tablespoons of Extra Virgin, slightly brown the garlic and parsley.
  6. Pour in half a glass of wine, then add the tomato paste. After 5 minutes add the shrimp, let simmer, then add the broth and simmer for 10 minutes
  7. Once cooked thicken the mixture with two tablespoons of cornstarch, mix well, cook for 5 minutes and serve.

A little extra
