Ingredients

Preparation

  1. Remove all outer artichoke leaves, leaving only the heart. To avoid oxidisation immerse them in a bowl of cold water and lemon juice.
  2. Cut the artichoke hearts very finely and marinate them for an hour with the juice of three lemons, four tablespoons of olive oil, salt and pepper.
  3. Mayonnaise is very easy to prepare if you have a hand held blender in the house! In the narrow, tall container, add the egg, vinegar, lemon juice, salt and pepper.
  4. Work the hand held blender and while blending add the oil a little at a time.
  5. The recommended amount produces a thick but fluffy mayonnaise but if the mayonnaise desired is either of a smoother or denser consistency, remove or add 50ml of extra virgin olive oil respectively.
  6. Drain the marinated artichoke hearts, add salt to taste.
  7. In 4 small bowls, place two tablespoons of mayonnaise, artichoke hears and some grana padana (cheese) shavings.
