Pumpkin au gratin with vegetables

Ingredients

FOR 4 SERVINGS
Mashed potatoes
1 pack
Soy sauce
100 ml
Grated cheese
100 g
Tomato sauce
200 g
Chickpea
1 tin
Pumpkin
250 g (only the flesh)
Red peppers
1
Eggplant
1
Carrots

Onion
1
Fresh oregano
1 nip
Salt
as needed
Extra Virgin olive oil
as needed

Preparation

  1. Prepare mashed potatoes and put to the side. Clean and chop onions, brown in a fry pan with some Extra Virgin olive oil. Add pumpkin and other vegetables which have been washed and cut into cubes, cook on low heat for 10 minutes.
  2. Add the tomato sauce, oregano, soy sauce and continue cooking for another 10 minutes, add the chickpeas, salt and pepper to taste.
  3. Place the vegetables in a baking dish and cover with mashed potatoes, dust with grated cheese. Bake in a preheated oven, cook at high temperature allowing the au gratin to occur in only a few minutes. Serve hot.
