Libyan Hummus

Ingredients

FOR 4 SERVINGS
Boiled chickpeas
A box
Tahina (sesame seeds sauce)
50 g
Lemon
1
Garlic
2 cloves
Paprika
as needed
Parsley
1 small tuft
Extra Virgin olive oil
as needed
Salt
as needed

Preparation

  • Squeeze the lemon. Wash the chickpeas in running water.
  • In the food processor add chickpeas, lemon juice, paprika, cloves of garlic, parsley and tahini.
  • Blend to a smooth cream. Add salt, a little olive oil and mix.
  • Pour the hummus into individual bowls, garnish the surface with a small amount of Extra Virgin olive and a pinch of paprika or chopped parsley.
  • Serve the bowls to each dinner guest with crudités such as carrot and coloured pepper or spring onions sticks.
