Lemon ice cream on wafer and almond macaroons

Ingredients

FOR 4 SERVINGS
Whipped cream
20 cl
Sugar
275 g
Milk
125 cl
Lemon Juice Lemoniny
200 ml
Apples

White flour
75 g
Butter
100 g
Eggs
2 (albumen)
Amaretti
50 g
Almonds
30 g

Preparation

For the ice cream:

  1. Whip the lemon juice with sugar, peeled and grated apple and milk.
  2. Mix carefully Finally add the whipped cream and pour the mixture into an ice cream maker for about twenty minutes and serve in ice cream cups, chilled in advance in the freezer.

For the wafers:

  1. Cream the butter at room temperature in a bowl until it is fluffy.
  2. Add sugar, flour, amaretti and chopped almonds.
  3. Whisk the egg whites and gently fold them into the first mixture, it should be reasonably soft.
  4. Roll the dough until it is thin, cut disks and evenly distribute them onto a greased oven tray, leaving sufficient distance between each one.
  5. Bake for 7 to 8 minutes in a preheated oven at 200° C. When they are brown, remove them from the oven and create cups by laying them over a mould.

Lemoniny lemon juice is perfect, made from Sicilian lemons.
