Rice balls with olives and scamorza cheese

Ingredients

FOR 4 SERVINGS
Carnaroli Rice
250 g
Monini green pitted olives
1 vase
Smoked scamorza cheese
150 g
Eggs
2
White flour
100 g
Bread crumbs
100 g
Grated Parmesan
100 g
Vegetable broth
600 ml
Olive oil
as needed to fry
Extra Virgin olive oil
as needed
Salt
as needed
Pepper
as needed

Preparation

  1. Sauté the onion in a pan, toast the rice and let it cook basting with broth. Adjust for salt and pepper.
  2. When almost done, add the saffron, previously placed soaking in the water, when cooked add parmesan.
  3. When cold, form the rice into balls, in the centre insert a pitted green olive stuffed with smoked scamorza cheese.
  4. Close well and roll the rice ball in flour, then the egg, and then the bread crumbs - fry.
  5. Serve hot.
