Risotto with strawberries

Ingredients

FOR 4 SERVINGS
Carnaroli Rice
300 g
Strawberries
2 boxes
Red onion
1
Stock cube
1
Sparkling white wine
1 glass
Extra Virgin olive oil
3 spoons
Cream
2 spoons
Lemon zest
1
Chives
a tuft
Salt
as needed

Preparation

  1. Peel, wash and dry strawberries. Cut into slices and place in a dish. Clean and thinly slice the red onion. Wash, dry and slice the sprig of chives.
  2. In a saucepan, prepare the broth with a stock cube and a pinch of salt.
  3. In a pan, brown the onion in 3 tablespoons of Extra Virgin olive oil.
  4. Pour the rice in and toast lightly, stirring, then blend it with sparkling wine.
  5. When the wine has evaporated, add the strawberry slices, leaving some aside to garnish the dish. Then, stirring constantly, add the first ladle of prepared broth.
  6. Continue adding the broth a little at a time until almost cooked.
  7. Switch off when the rice is still a little "al dente", but still surrounded by its starch, therefore soft, never dry.
  8. Add the cream, cover and let stand a few minutes.
  9. Once it has been left to stand, uncover and sprinkle with lemon zest and give it a final mix.
  10. Serve, garnish each plate with slices of strawberries that had been put aside and sprinkle with chopped chives.
