Asparagus and egg puffs

Ingredients

Green asparagus
1 clove
Brik pastry (Arab pastry)
6 10x10cm rectangles
Eggs

Extra Virgin olive oil
as needed
Salt

Preparation

  1. Wash the asparagus, remove the end part of the stem and scrape carefully. Tie them with some butcher's twine and put them in an appropriate saucepan.
  2. Steam for about 15/20 minutes depending on the size. When cooked, separate the tops and cut the rest into small pieces.
  3. On a work surface, roll out the Brik dough and coat the surface with oil Extra Virgin.
  4. Fry the eggs and place one on each Brik sheet. Distribute over each Brik sheet, the asparagus complete with tips and flavour with a light dusting of salt and pepper.
  5. Brown for a few minutes in a preheated oven, then serve.

A little extra

Try coating the pastry with an Extra Virgin with a fruity and slightly herbaceous aroma such as the Bios Monini.
