Ingredients

Extra Virgin olive oil

1 clove
Beef Carpaccio
400 g
Monini Balsamic Vinegar of Modena Spray
as needed
Extra Virgin olive oil
as needed
Salt
as needed

Preparation

  1. Prepare a very hard mash, add eggs, salt and mix well.
  2. With the help of a teaspoon, form small balls and place a small piece of anchovy and one of butter in the centre of each of them. Roll the balls of mashed potato first in almonds and then in the flour.
  3. Fry in hot Extra Virgin olive oil and drain on paper towels. Serve immediately.

A little extra

To fry, a not overly perfumed Extra Virgin olive oil can be used. Monini Poggiolo works very well.
