By-products are what is left over from the oil pressing process and there are three kinds: paste, amurca and pomace. Together they account for around 85% of by-products generated by the pressing process; the remaining 15% is transformed into EVO.
Thanks to our latest-generation mills, we already reuse 100% of by-products for electrical power and fert-irrigation: amurca is disposed of as fertiliser, within certain limits; pomace is conferred for transformation into biogas and pits for transformation into fuel.
By 2030 we want to transform current by-products of the pressing process into unique and innovative foodstuffs, benefiting circular economy and healthy eating, while also using every part of the olive. Currently we are working to develop innovative foods, in partnership with the University of Perugia.
