Preparation

Preheat oven to 180° degrees.

Bring a large pot of water to a boil and add in diced potatoes. Season water with 1 tablespoon of salt and allow potatoes to cook until soft.

While the potatoes are cooking, in a large saucepan, on a high heat, add in a drizzle of Monini Classico Extra Virgin Olive Oil and add in onions and garlic. Cook for a few minutes or until softened. Add in chopped prawns and season with salt and pepper. Cook for 5 minutes and add in fresh parsley. Remove from heat and set aside.

Drain potatoes and mash with a potato masher. Drizzle in Monini Classico Extra Virgin Olive Oil and stir through. Add in mascarpone, 1 cup of parmesan cheese, prawn mixture and season with salt and pepper.

Lay mushrooms onto a baking tray and drizzle over Monini Classico Extra Virgin Olive Oil. Season each mushroom with salt and pepper. Fill each mushroom with the potato mixture.

In a small bowl, mix remaining ½ cup parmesan cheese and breadcrumbs and spoon over the top of the mushrooms.

Place into the oven for 20-25 minutes, or until the top of the mushrooms are golden brown. Garnish with fresh parsley and enjoy!
