Tabbouleh Salad

Ingredients
For the filling:
  • 1 large bunch flat-leaf parsley
  • 1/2 cup fresh mint leaves
  • 1/3 cup cooked bulgur
  • 3 scallions
  • 2 medium tomatoes
  • 1/2 of a large cucumber
  • 1 clove garlic
  • 1/4 cup lemon juice
  • 1/4 cup Monini Dauno Gargano PDO Extra Virgin Olive Oil
  • 1/2 tsp ground cumin
  • Salt and pepper to taste
Preparation
  1. Finely chop tomatoes and cucumbers and place in a small bowl. Season with a pinch of salt and set aside while you prepare the rest of the ingredients. 
  2. Grate garlic clove and place in a small bowl with the lemon juice. Set aside. 
  3. Remove the thick stems from the parsley. Use a very sharp knife to finely slice the stems and leaves and then place chopped parsley into a large bowl. 
  4. Gather the mint leaves into a bunch and finely chop, then add them to the bowl with the parsley. Thinly slice the scallions crosswise and add them to the bowl with the parsley and mint. 
  5. Add the bulgur, garlic and lemon juice, Monini Dauno Gargano PDO EVOO, and cumin to the bowl. Drain the excess water from the tomatoes and cucumbers and then add them to the bowl. Stir everything together and season with salt and pepper. Stir once more and serve.
