WATERMELON and FETA SALAD

Ingredients
SERVES 1 PERSON
  • 1 large slice of watermelon
  • 3 oz. feta cheese
  • handful of fresh mint leaves
  • 1 tablespoon of fresh lemon juice
  • Extra virgin olive oil
  • Salt
  • black pepper
Preparation

Peel the watermelon, and cut the pulp into cubes, removing the seeds.

Pour into a bowl and add the crumbled feta and coarsely chopped mint.

Season with the emulsion prepared with 1 tablespoon of oil, lemon juice, a pinch of salt and a sprinkle of pepper.
