BBQ or GAS STOVE TOP: Place capsicums directly on BBQ grill/gas cook top, turn to become charred* all over
OVEN: Preheat oven 200°C and place capsicums on a lined oven tray. Turn every 10min until they become nearly charred* on each side.* Don’t overcook/over-char as they become too soft to handle!

When they are done and still hot, place them into a large bowl and cover with cling wrap or a towel for approx. 15-30min.
This will allow the capsicum to sweat and become easier to peel and remove their skins. Do not rinse under water as all the flavour will be washed away.

After peeling, remove the stem, deseed and tear or cut strips lengthways. Place into a clean bowl and keep aside.

Prepare the spices/oil marinade and add to the roasted capsicum strips until fully coated. Leave to marinate for a couple hours so the flavours can become enticingly delicious.

If you’re creating this a day before an event you can leave to marinate in the fridge overnight. Before serving, leave 5-10min to bring back to room temp.
