Preparation

Preheat oven 200°C

Place the Monini Classico Extra Virgin Olive Oil, fennel, onion and capsicum in a large oven-proof pan on low to medium heat.

Sautè for about 12 minutes, stirring regularly, until well softened and not yet browned.

Add the garlic, and when it becomes fragrant, add the spices and cook for a few more minutes, stirring well.

Pour in the tomato passata, plus about ½ cup of hot water and the stalks of thyme.

Simmer, covered for about 15 minutes. If the sauce becomes too thick, add a bit more water and stir well.

Place the pieces of fish in the sauce and then the cubes of feta, so they are alternating.

Bake for about 12 minutes or until the fish is cooked through, the feta has turned golden and the sauce is bubbling.

You may like to pop it under the grill for a minute or so to give the feta a bit more colour.

Scatter the thyme leaves and drizzle on the lemon, then serve hot with plenty of crusty bread.
