Preparation

Preheat oven to 325° F and line a sheet pan with parchment paper. Set aside. 

In a medium bowl, whisk together flour, baking soda, baking powder, and salt. Set aside. 

In the bowl of a stand mixer (or using an electric mixer), combine olive oil, brown sugar, and granulated sugar. Mix on medium speed for 2-3 minutes, until smooth and well-combined. With the mixer on low speed, add the eggs one at a time, followed by the vanilla extract. Mix for one minute more until homogenized. 

Gradually add the dry ingredients and mix until just combined, followed by the chocolate chunks. 

Using a 1 1/2 tbsp cookie scoop, dollop cookie dough onto prepared pan, leaving 2” of space between each cookie. Bake for 10-11 minutes, until the edges just begin to turn golden brown and the tops are set. Tap the cookie sheet on the counter to let settle and then cool completely on the pan. 

Top with flaky salt if desired and enjoy!
