D.O.P.  (Protected Designation of Origin) is used to describe oils (or other foodstuff) that are entirely produced in a given geographical area according to the officially recognized rules and are controlled by local authorities.

IGP (Protected Geographical Indication) is used for products for which at least one stage of the production occurs in a specific geographical area. Thanks to the European regulations products with unique characteristics related to a territory are protected from imitation while consumers are guaranteed for the high quality.
