Chicken Lemon & Olive Platter

Ingredients
  • 4 tbsp Monini GranFruttato Extra Virgin Olive Oil
  • divided 2 chicken breasts
  • 3 tsp kosher salt
  • 2 tsp black pepper
  • 3 lemons
  • 4 garlic cloves, crushed
  • 1/2 cup green olives, pitted & sliced
  • 1/2 cup parsley, chopped
  • Serve with naan & tzatziki
Preparation
  1. Season the chicken breasts generously with salt and black pepper on both sides then place on a rimmed baking sheet and set aside. 
  2. Thinly slice 2 lemons and juice the third.
  3. In a small bowl, combine lemon juice, crushed garlic and 2 Tablespoons of Monini GranFruttato EVOO.
  4. Lightly oil your grill or grill pan with Monini GranFruttato EVOO then grill the seasoned chicken breast for 5-6 minutes on the first side then flip and grill for another 3-5 minutes or until the thickest part of breasts registers 165°F.
  5. Move the grilled chicken breasts to a cutting board and let rest 10 minutes before slicing. 
  6. While the chicken breast rest, grill the lemon slices.
  7. Place the sliced grilled chicken and grilled lemon slices to a platter then drizzle with the lemon and garlic olive oil mixture, garnish with sliced olives and parsley and drizzle with more Monini GranFruttato Extra Virgin Olive Oil. Serve with naan and tzatziki.
