Easy Lemon Herb Fish

Ingredients
  • Serving 4
  • 1/3 cup Monini Lemon Flavored Extra Virgin Olive Oil
  • 1/2 tsp red pepper flakes
  • 1/4 tsp kosher salt
  • Freshly ground black pepper
  • 2-3 basil leaves, torn
  • 1 lb cod filets
  • 3 tbsp unsalted butter
  • 1 large lemon
  • Kosher salt
  • Freshly ground black pepper
  • 4 sprigs rosemary
Preparation
  1. In a small bowl, combine Monini Lemon Flavored EVOO, red pepper flakes, salt, pepper, lemon zest, and herbs. Stir together and set aside. 
  2. Slice the lemon and squeeze its juice into a bowl. Set the juice aside and save the lemon halves. Sprinkle both sides of the fish with salt and pepper and set aside. 
  3. Heat butter in a large skillet over medium-high heat. When the butter is melted and beginning to bubble, add the lemons, cut side down, and the rosemary sprigs. Cook for 3-4 minutes, until the lemons begin to caramelize and the herbs are fragrant. Remove lemon halves and herbs from the pan. 
  4. Add the fish to the hot pan and cook for 2-3 minutes. Flip the fish, add the reserved lemon juice to the pan, and then cover and cook for 1-2 minutes more, depending on the thickness of the filets. Fish should be tender and flaky. 
  5. Spoon lemon oil over the top of the fish and serve immediately.
