Mexican Ceviche

Ingredients
  • Serving 4
  • 1 lb Shrimp, peeled and deveined
  • ¼ C Fresh Lime Juice
  • ½ C Diced Tomato
  • ¼ C Diced Red Onion
  • ½ C Diced Mini Cucumber
  • ¼ C Chopped Cilantro
  • ¼ C 100% ORGANIC LEMON FLAVORED EXTRA VIRGIN OLIVE OIL
  • Salt and Pepper to Taste
  • Tortilla Chips For Serving
  • Extra Lime Wedges for Serving
Preparation
  • Chop the shrimp and soak it in the lime juice for 15-20 minutes, or until the shrimp turns pink.
  • Toss the shrimp with the remaining ingredients and serve cold with tortilla chips.
