Sicilian Seafood Boil

Ingredients
Serves: 4-6
  • 3 ears of corn, cut in half crosswise
  • 4 Italian sausages, sliced into rounds
  • 3 tbsp Monini Sicilia PGI Extra Virgin Olive Oil
  • 1 head of garlic, cut crosswise
  • 1/2 tsp crushed red pepper
  • 12 cups water
  • 3 lemons, halved
  • 4-6 sprigs of fresh oregano
  • 1/4 tsp saffron threads
  • 1 lb fingerling potatoes
  • 2-3 lobster tails
  • 1/2 lb large shrimp, seasoned with 1/2 tsp salt, 1/4 tsp pepper, and 1/2 tsp Italian seasoning
  • 1/2 lb fresh clams
FOR GARNISHING
  • Monini Sicilia PGI Extra Virgin Olive Oil
  • 1-2 sprigs fresh oregano
  • 1-2 lemons
  • 1 tbsp flaky salt
Preparation
  1. Cut corn in half and slice sausages. Cut the head of garlic in half crosswise. Set aside. 
  2. Heat 3 tbsp of Monini Sicilia PGI  Extra Virgin Olive Oil  in a large pot over medium heat. Add the halved garlic, cut side down, along with the crushed red pepper and sliced Italian sausage. Saute for about 5 minutes, until garlic is golden and sausage is browned. Remove sausage from the pot and set aside. 
  3. Add the 12 cups of water to the pot with the garlic, along with the fresh oregano sprigs, saffron, and squeeze in the juice from the lemons. Bring to a simmer. 
  4. Add the potatoes and boil for about 15 minutes, until fork tender. Add the corn during the last 5 minutes of cooking time. Use a slotted spoon to remove the potatoes and corn from the liquid and place in the bowl with the sausages. 
  5. With the water still simmering, add in the lobster tails, shrimp and clams and cook for 5-7 minutes, until lobster tails are bright red, shrimp is pink and opaque, and clams have opened up. 
  6. Drain and discard the head of garlic and oregano stems.
  7. To serve, combine seafood, potatoes, corn, and sausage, and spread out over a clean table or a large serving dish. Drizzle with Monini Sicilia PGI Extra Virgin Olive Oil, squeeze lemon juice over the top, and garnish with fresh oregano leaves and flaky salt.
