Zucchini Gazpacho

Ingredients
  • 3 cup zucchini, sliced
  • 2 cup English cucumber, sliced + extra for serving
  • 3 scallions, chopped
  • ½ cup fresh basil leaves
  • ½ cup Monini GranFruttato Extra Virgin Olive Oil + more for serving
  • ½ cup ice cubes
  • Salt and pepper to taste
  • ½ sour cream + extra for serving
Preparation
  1. Puree all ingredients in a food processor or high powered blender.
  2. Taste for seasoning, add extra salt and pepper if needed.
  3. Plate with an extra dollop of sour cream, extra drizzle of olive oil, chopped cucumber, basil leaves, and flaky salt. Enjoy!
