Gnocchi Pomodoro

Ingredients
  • 1 Pack (9 oz.) gnocchi
  • 1 16 oz marinara sauce
  • 2 tbsp Monini Amabile Extra Virgin Olive Oil + more for serving
  • 1 clove garlic, minced
  • 1 tsp italian seasoning Salt and pepper to taste
  • 4 oz. fresh mozzarella, cut in ½” pieces
  • Fresh basil leaves to taste
  • 2 tbsp Parmigiano Reggiano, grated
Preparation
  1. Heat Monini Amabile EVOO in a large cast iron pan on medium heat; add garlic and cook for a minute over medium heat, being careful not to brown it. Add the italian seasoning and marinara. Stir and cook for 7-8 minutes on low heat, or until heated through. Season with salt and pepper to taste.
  2. Meanwhile, cook gnocchi separately in salted boiling water according to package directions. Drain gnocchi and place them in the pan with the tomato sauce along with basil leaves and the ½ of the fresh mozzarella, stirring gently on low heat until the mozzarella starts to melt.
  3. Add the rest of the mozzarella to the top and place under the broiler until cheese is bubbly and golden brown. 
  4. Drizzle with Monini Amabile EVOO and serve.
